- Marcar en abundante aceite las albóndigas y reservar.
- En una sartén u olla añadir las cebollas y pochar durante 15 minutos removiendo de vez en cuando. Yo lo he hecho con una cebolla blanca y otra morada.
- Una vez pasado el tiempo añadir los dientes de ajo y la hoja de laurel durante un par de minutos removiendo.
- Pasado el tiempo añadir una cucharadita de harina y remover durante un par de minutos para que se tueste y espese un poco.
- Pasado el tiempo añadir el vino, remover para mezclar bien entre 3 y 5 minutos que se evapore.
- Evaporado el alcohol añadir 0.300 L de caldo de pollo caliente para no asustar (cortar) la cocción. Reducir y espesar.
- Por último apagar el fuego, añadir el orégano, pimienta, 0.200 L de caldo de pollo calientes, remover para mezclar bien y dejar tapado hasta emplatar y servir o enfriar un poco y al frigorífico.
