- Poner la carne en un bol, rallar la cebolla y el ajo, picar muy chiquito el pimiento y agregarle a la carne, salpimentar y amasar un rato para que se forme una pasta y dejar reposar 30'tapado en la heladera.
- Mientras, cortar la cebolla, los tomates pelados, el pimiento y el ajo, rallar las zanahorias. En una cacerola, poner un chorrito de aceite de oliva y saltear la cebolla junto con el ajo unos min. luego incorporar lo demás, cocinar por 20'a fuego bajo con un chorro de agua sal y pimienta, pasado este tiempo, agregar la hoja de laurel y cocinar 5' más, apagar el fuego y mixear, reservar.
- Armamos las albóndigas, si creemos necesitar, a la pasta de carne le agregamos harina integral, si podemos armar sin ella mejor, una vez hechas, si las pasamos por harina, luego por huevo batido y finalmente por pan rallado mezclado con avena.
- Poner rocío vegetal o aceite de oliva en una sartén y las sellamos, ponemos en una placa de horno con rocío vegetal y las llevamos a horno medio y cocinamos por 20/25'.
- Tips: para pelar los tomates sin sacar pulpa, lavar y poner en un recipiente hondo con un corte en cruz en la superficie, echar agua caliente y girarlos cada tanto, sacarlos del agua y retirar la piel. Son unos 8/10' más o menos en el agua.
