  1. Lo primero que vamos a hacer es mezclar la carne picada con un huevo y salpimetamos todo. Añadimos también el ajo picado muy fino y un poco de pan rallado hasta que veamos que el conjunto es manejable para hacer las albóndigas pero que no quede muy compacto para que salgan jugosas.
  2. Ponemos aceite al fuego mientras vamos haciendo las albóndigas más o menos del mismo tamaño y las pasamos por harina.
  3. Freímos las albóndigas un poco, no más de un par de minutos y las reservamos.
  4. Picamos pequeño la cebolla, el puerro y las zanahorias, echamos un poco de aceite en una olla express y añadimos las verduras junto a el laurel y lo pochamos todo junto durante un rato.
  5. Una vez pochadas las verduras añadimos las albóndigas, sal, el vaso de vino y un poco de agua hasta que estén casi cubiertas.
  6. Ponemos la olla a fuego medio-alto y la dejamos 9 minutos después de la salida del vapor. Cuando podamos abrir la olla, sacamos las albóndigas y el laurel y pasamos por la batidora las verduras con el caldo hasta obtener una salsa. La podemos pasar por un colador para que esté todavía más fina.
  7. Incorporamos de nuevo las albóndigas y lo dejamos a fuego bajo durante unos 10 - 15 minutos... y a comer !!!!!
